A spiral mixer is built for one job — developing bread dough — and it does that job with less friction heat and less strain on the machine than any planetary of equivalent size. A planetary mixer is a general-purpose machine: change the tool and it whips cream, creams butter and sugar, mixes cake batter, and handles light dough. How a spiral mixer works
A spiral mixer has a fixed, spiral-shaped hook mounted off-centre, plus a bowl that rotates on its own drive. The hook stays in one place; the bowl brings the dough to it. A stationary centre bar or breaker bar splits the dough mass on each pass, so the dough is folded and stretched rather than dragged around the bowl.
Three consequences follow from that geometry:
- Lower friction heat. The dough is worked by stretching, not by being churned against a bowl wall. Dough temperature climbs more slowly, which matters enormously in a tropical bakery where your flour, water and room are already warm.
- Efficient gluten development. The repeated fold-and-stretch action builds the gluten network in less time than a hook orbiting through the same mass.

How a planetary mixer works
A planetary mixer holds the bowl still and moves a single agitator on a planetary path — the tool spins on its own axis while orbiting the bowl, so it eventually reaches every point of the bowl interior. The agitator is interchangeable: a dough hook, a flat beater or paddle, and a wire whisk are the standard three.
That interchangeability is the whole argument for a planetary. Final dough temperature drives fermentation speed, and fermentation speed drives flavour, crumb and shelf life. Bread-led bakery. Buns, sandwich loaves, pizza bases, kimbula banis. A spiral is the primary machine; a small planetary handles fillings and icings.

- What is your largest single batch, by dough weight, on your busiest day? Size the bowl around that batch sitting comfortably within its working range.
- What is your smallest routine batch? Confirm the machine can mix it properly.
- How many batches back to back? Continuous bread production is spiral territory; a planetary needs recovery time under heavy dough.

Frequently asked questions
Can a planetary mixer make bread dough?
Yes, within the manufacturer's stated dough ratio. It will take longer to develop gluten and will warm the dough more than a spiral. For occasional bread in a cake-led bakery that is perfectly workable. For daily bread production, a planetary run at its limit is being used outside its design intent.
Can a spiral mixer whip cream or mix cake batter?
No. The hook is fixed and cannot be changed for a whisk or beater, and the fold-and-stretch action does not aerate. A bakery that needs both jobs needs both machines.
Which should I buy first if I can only buy one?
